Crusted Chicken with Garlic Dressing

Makes 4 servings

  • 4 4-ounce boneless skinless chicken breasts
  • 1 tsp olive oil
  • Salt and pepper to taste


  • 1 cup Penn Maid┬« Light Sour Cream
  • 1 tsp oregano
  • 1/4 tsp ground black pepper
  • 1 Tbsp lemon juice
  • 1 tsp minced garlic
  • 2 cups seasoned bread crumbs
  • Paprika
  • 2 Tbsp 1% Lowfat Milk

Preheat oven to 350oF. Lightly coat the chicken with olive oil and season with salt and pepper. Mix together the sour cream, oregano, salt, pepper, lemon juice and garlic. Reserve 1/2 cup of this blend for the dressing. Use the remaining blend in the chicken preparation. Do not mix the two together. Coat the chicken in the sour cream blend, and then carefully dip in the bread crumbs to coat. Spray a baking pan with nonstick cooking spray and set the chicken on top. Lightly spray the top of the chicken with nonstick cooking spray. Sprinkle with paprika. Bake approximately 25 minutes or until the chicken is cooked all the way through. Whisk 2 tablespoons of milk into the reserved sour cream blend to make the garlic dressing. Serve chicken with dollop of dressing.
