Smoked Salmon with Cucumber Salad and Creamy Dill Dressing

Makes 4 servings

• 4 1-ounce slices smoked salmon

SALAD:
• 2 tsp olive oil
• 1/2 tsp caraway seed
• 1 cup cucumber, peeled and chopped
• 1 cup red onion
• 2 tsp balsamic vinegar
• salt and pepper to taste

DRESSING:
• 1 cup Penn Maid® Lowfat Cottage Cheese
• 2 Tbsp fresh dill, chopped
• 1/4 cup lemon juice
• 4 tsp olive oil
• salt and pepper to taste

GARNISH:
• 4 red leaf lettuce leaves
• 1 Tbsp fresh dill, chopped
• fresh ground black pepper to taste

DIRECTIONS:
For salad, in a medium mixing bowl, combine all ingredients for the cucumber onion salad. Combine well.

For dressing, place all in ingredientsin a food process or blender and blend until smooth, about 45 seconds to 1 minute. Add salt and pepper to taste.

To serve, place the lettuce leaves on serving plate. Top with smoked salmon and drizzle salad dressing on top.  Arrange cucumber onion salad on the plate. Sprinkle with chopped dill and fresh black pepper to taste then serve.
